How to store matcha

Matcha is a fresh product in powder form. Air, light, heat, and moisture are its four enemies — and all four are easy to keep out.

Simple rules that work

Keep matcha in its airtight, opaque tin, sealed immediately after each use. Store it in a cool, dark cupboard away from the stove, and always scoop with a dry spoon.

Because matcha absorbs aromas easily, keep it away from spices, coffee, and anything strongly scented.

Treat matcha like fresh herbs, not like a pantry staple.

Should it go in the fridge?

Unopened tins store well in the refrigerator for the long term. Once opened, refrigeration is a trade-off: every time a cold tin meets warm air, condensation threatens. If you refrigerate an opened tin, let it come fully to room temperature before opening.

For a tin you finish within a month, a cool dark cupboard is usually the safer, simpler choice.
